A wish about now (souhait): I wish + past simple (or could, were). I wish I knew. = J'aimerais savoir.Un souhait sur le présent : I wish + prétérit (ou could, were). I wish I knew. = J'aimerais savoir.

A regret about the past: I wish + had + past participle (or could have + past participle). I wish I had known. = J'aurais aimé savoir.Un regret sur le passé : I wish + had + participe passé (ou could have + participe passé). I wish I had known. = J'aurais aimé savoir.

⚠️ Careful with had: in I wish I had a dog, it's the verb have in the past simple → a wish!⚠️ Attention à had : dans I wish I had a dog, c'est le verbe have au prétérit → un souhait !
